What's your favorite kind of cake? Mine is Carrot! I love the combination of carrots, cinnamon, cream cheese & walnuts!  A slice of carrot cake is perfect with a cup of tea after dinner, and since it has carrots, it is a healthy breakfast choice with your morning coffee!

This recipe for Carrot Cake is simple and delicious, and perfect for all seasons: a summer BBQ, Easter Sunday, or an cool Autumn evening.

 Mix together sugar, oil, & eggs until creamy. Add Flour, cinnamon, baking soda, vanilla, salt and mix together. ( I also add a sprinkle of nutmeg to the batter) Then add the shredded carrots & nuts, I always use my favorite, walnuts.


Bake at 350 for 45 min, and let cool for a least an hour.


You can buy the frosting, but I like to make mine, and with a recipe this easy, why not!!

Cream Cheese Frosting 
1 8oz package cream cheese
1/4 stick butter
1 teaspoon vanilla
2 or 3 teaspoons milk
4 cups powdered sugar
In your mixer blend together softened cream cheese & butter. Add vanilla & milk. One cup at a time mix powdered sugar into cream cheese mixture. Blend together until creamy & delicious!

Frost cake once cooled & sprinkle frosting with chopped walnuts!

Last Saturday was the quintessential beach day! Beautiful blue skies, warm sand, and the perfect view of the ocean. Chris & David spent the day surfing & kite flying, while I sunbathed in my chair and read. 
Chris is practicing flying his kite, so he doesn't hurt himself kite surfing



 I grew up on the beach, literally, I lived on an island. But Emerald Isle is nothing like the Virginia Beach ocean front. I love being able to relax at the beach, and then walk the boardwalk to all the great shops & restaurants. And that is exactly what we did on Saturday!
 Lunch at Pi Pizza on 31st, was delicious! BBQ chicken pizza (per boys request) wings, and prosciutto & mozzarella fritters. The beach always makes you hungry!

 If there was any negative to the day, although minimal, were all the Jellies in the ocean. Here are some that washed up on shore. The jellies didn't frighten most swimmers, but I definitely didn't go any further than my little tootsies.

 Chris & I both feel that traveling is one of the greatest joys of life! We love going someplace new and experience the culture together. It makes for great memories, and creates a special bond between travelers. So when we got married we made it a priority to try and travel together at least once a year. Unfortunately this year with moving from North Carolina to Virginia, buying a house & both starting new jobs, our schedules as well as budget may not allow for us to travel to a new destination. So for now I have to live vicariously through my friends, and pictures from past travels. I have recently been favoring my album from our vacation to Florida last year. Here are a few pics that highlight our trip to the wonderful world of Walt Disney!

 What a fabulous trip it was! We ate fabulous dinners at some of  Disney's best restaurants, explored all four Disney parks: Magic Kingdom, Animal Kingdom, Epcot, & Hollywood Studios, as well as Downtown Disney & the Disney Boardwalk. We rode rides that made us laugh, smile, scream & some that even made us a little woozy. Going in the middle of July was definitely an experience, we sweated our butts off! But we survived, a lesson learned for when we return. Hopefully the next time we visit we will have little Strouds to join us. It was a trip of a lifetime, and one that we will always cherish.

The weather today in Virginia Beach was absolutely splendid! The past few days have been unbearable, with the heat index in the 100's, any time spent outside should be by the water or not at all, but today was glorious! Temps hovering around the low 80's, clear blue skies & not an ounce of humidity! It as the perfect evening for a cruise!
Our best friend David stopped by with his 1965 Chevelle, so we all went for a ride around town!

We rode around town till the sun set, with the wind in our hair, we felt free!! (Sounds like and 80's rock song!)

Summer Salad

I have been craving something light & refreshing on these hot summer days. So other night when we grilled out beer brats,  I thought of the perfect summer salad to go with our meal. It was simple & delicious!

 I sliced up cucumbers, Roma tomatoes, & red onion. I added a dash of salt & pepper and mixed it all together with a light baslamic & basil vinaigrette. Simply scrumptious!! 
 It was so delicious that we devoured it before I could even take a picture!! But this is what it looked like!
It was the just the thing I have been craving!  What do you enjoy on these hot summer days?

The Painted Lady

Our guest bedroom needed new paint desperately! When we bought our home, only then did we realize the previous owners painted the room around their existing furniture. wHaT?! Crazy right! Needless to say, this was one of our first projects that needed to be completed pronto.
So I took to the walls! I taped, spackled, sanded, wiped down, and rolled a least a gallon or two of paint! My dad, a contractor, was very impressed to hear I did this all on my own, which made painting the bedroom even more rewarding!

 It took me close to 5 hours to finish, but I am very proud of myself for getting the job done! Chris was also happy/impressed, probably because this meant he didn't have to do it!

Don't you love it! The color is called "tropical tan" and I think it goes great with our white wicker bedroom furniture. Now that this room is done its onto the next!!

Homey

Having just moved into our house, I am enjoying each & every  new room that is now ours. It has been great to see all our personal belongings again, after having them stored away for over 4 months. But I would have to say I have 2  favorite spots in my new home.
This is what I like to call my coffee counter. After months of using only a french press, I was delighted to find my coffee maker and brew a nice bold cup of Starbucks coffee. Here I also have my teapot with assorted teas: black, Chi, green, chamomile. My love for tea & coffee has grown over the years & I am excited to have a spot that is solely devoted to my morning brew.
My coffee counter has a beautiful window that over looks our beautiful backyard. I love the natural light the window brings in, it fills the entire kitchen with sunshine.
This is my second favorite spot! As my first patio set & I intend to enjoy it to the fullest! I love sitting out here in the morning with my coffee and a good book. It is the perfect spot to hang out in the evenings while the food is cooking on the grill, or at any time just to relax. I am falling more and more in love with my new house, room by room it is all coming together, it is starting to not only feel like a house, but a home.
