Fall soups

Lately, I have been on a soup kick!  Nothing like a  bowl of deliciousness to warm you up on these crisp Fall evenings.  I made a creamy tomato basil soup the other night,  it was truly scrumptious and definitely a recipe I will use over & over again.

 I found the recipe here, but did a few changes of my own. Here is what I did:

Add two 28 oz cans crushed tomatoes & one 14 oz can chicken broth in a large sauce pan, bring to a boil then reduce heat, cover & simmer for 10 minutes.  Add a dash of sugar, salt & pepper to taste, and fresh basil, minced. Then stir in 1 cup heavy cream & 6 tablespoons of butter. Mix until creamy & butter is melted.
Enjoy!




A fresh salad &  grilled cheese made our dinner complete!  And with soup magic, it got better & better each day. Yum!
