no-bake energy bites

Like so many others, I jumped on the "get healthy" band wagon for 2013.  I'm not dieting per say, just changing some of my not-so-good eating habits.  As one of best friends would say, it's a "lifestyle change"; and I couldn't agree with her more.

So lately I have been searching{on Pinterest} for some healthy new recipes to add to my stockpile, and when I came across a recipe for no-bake energy bites I knew I had to try them.
Ingredients:
-1 cup dry oatmeal (I used old fashioned oats)
-1/2 cup peanut butter
-1/2 cup ground flax seed
-1/2 cup chocolate chips
-1/3 cup honey
-1 tsp. vanilla extract

Stir together all ingredients in a medium bowl, then chill in the fridge for half and hour.  Once chilled, roll into balls and store in an air tight container in the fridge.  Energy bites will last up to a week in the fridge, but I promise they won't last that long.

Makes about 15-20 balls
Like with most recipes there is always room to substitute different ingredients to make it more to your liking.  For example, replace the peanut butter with anyone of your favorite nut butters (almond, cashew, sunflower seed, ect.).  In addition to the chocolate chips or in place of them the possibilities are rather endless:(chopped dried fruit or berries, chopped walnuts, pecans or sunflower seeds, other chips: peanut butter, white chocolate, dark chocolate, M&M's, ect.)  Also, the original recipe calls for coconut flakes, seeing as I am not a coconut fan I just didn't add them in, but feel free to if you are coconut lover.

These little babies are so delicious and with such a flexible recipe you can make them to fit any lifestyle or diet!
