black bean & corn salsa

Let's be honest, we eat Mexican food at leastttt once a week in our house.  I always seem to have fixin's for nachos, fajitas, or the like in my fridge, which is something I know I got from my mom.  Its easy for Chris to dress up chips or tortillas with said fixin's while I like to pile everything onto a bed of lettuce with my dressing of choice being hot sauce, preferably this one.

This past Cinco de Mayo I knew we would be eating Mexican food pretty much the entire weekend, I mean when this special Mexican holiday falls on a Sunday you celebrate as much as you can, right!? Chips, guac, margaritas?!? need I say more.  So I decided to whip up a healthy-ish salsa to go with said deliciousness.

Here is my recipe of sorts, but as usual, I don't really have measurements for you, that's just not how I roll.

Black bean & Corn salsa
{1} can black beans, drained
{1} can Rotell diced tomatoes w/ green chilies
{1} can white sweet corn, drained
{1/2} red onion, diced
handful of cilantro, chopped
handful of Green onions, chopped
Seasonings: Cumin, Cayenne pepper, sea salt, garlic powder, & onion powder
hot Sauce

Mix all together & enjoy!

The great thing about cooking is you can make things your own and substitute what you do or don't like.  With the seasonings & hot sauce we like things extra flavorful and spicy in our house, but make it how you see fit.  And if you are sharing with a crowd of wimps, Oh I mean people who don't like spicy food ;) just omit the hot sauce.

If y'all are such mexican food junkies, you two need to hop on a flight over here to us, we'll take y'all to those places that you're a little sketched out to go to but end up being so incredible you don't ever want to stop eating! Besides, mexican food is about as popular as "american food" out here, LOVE IT!
