Ok, about this cake - ohgoodness.  I love carrot cake, dare I say it is my favorite dessert?  So when I saw a recipe proclaiming to be, "the best carrot cake ever" I had to try it.  Yes, it was a must.  And seeing as Easter is a great excuse to eat cake{but really, when is it not a good time to eat cake!?} I decided to bake this carrot cake for my family. 

This entire cake-baking-frosting process is a bit of a labor of love, but if you like to bake and have the time pleasepleaseplease make this cake.  It definitely lives up to "the best carrot cake ever" name -- and trust me I've had my fare share of carrot cakes.  

I bought a big pretty cake-carrying case and toted this beauty all the way from Virginia to NC for Easter weekend.  Showing off my creamcheesy creation and politely offering[making] everyone try at least one piece?  

My family, never one to turn down a sweet treat & familiar with my bossy shenanigans, all had the same reaction -- this really is the best carrot cake ever!

I take zero credit for the cake really, I just followed this amazing recipe and this layered cake tutorial.  Devoting an entire day of my spring break to this cake, I must say, was well worth it.  

And as of last night, the cake is officially gone!  Happy about this only because I have a bridesmaid dress to fit in and a bathing suit to shop for.   blarg.  

But seriously!? so so good.
