fresh apple cake

First and foremost -- a food photographer I am not; but trust me, make the cake, eat the cake -- you won't be disappointed.

Above all other desserts made with apples, this cake has to be my favorite.  My aunts recipe given to my mom years ago, and to me, it still trumps any coffee cake or pie, sorry pumpkin.  I crave it especially in the fall, during apple season of course.  After talking with my mom the other day who told me she made this cake to take to a picnic over the weekend, I was inspired to bake one of my own to take to a dinner with friends.  Truly the perfect dessert after a bowl of chili or some homemade BBQ -- but above all, my favorite way to eat this delicious slice of apple heaven is for breakfast with a hot cup of black coffee.

ingredients:
[2] cups sugar
[2] large eggs
[1] cup vegetable oil
[2] & [1/2] cups flour
[2] teaspoons baking powder
[1] teaspoon baking soda
[1] teaspoon cinnamon
[1/4] teaspoon nutmeg
[1] teaspoon salt
[1] teaspoon vanilla
[1] cup chopped walnuts*
[4] cups chopped raw apples*

Heat oven to 350 degrees and coat a 13x9 pan with your favorite not sticking spray.  Mix oil, eggs, vanilla, and sugar together in a large bowl, then add the chopped apples and stir to combine.  In another large bowl, mix together the dry ingredients: flour, baking soda & powder, cinnamon, nutmeg, & salt -- then add the chopped nuts to the dry mix.  Combine dry mix with wet-- use your muscles and stir to combine!  Batter will be stiff! Pour into pan and bake for 45 to 60 minutes; until the the top is golden and edges are browned slightly.  Let cool-- cake can be eaten warm or cold.   Enjoy with coffee or tea, or even vanilla ice cream.  Best for dessert, snack, breakfast, lunch, dinner...well you get the idea.

*notes-- I have always used chopped walnuts but I think pecans would go nicely as well.  And I like to use crisp apples with the peels on! And crisps pink or gala apples are my favorites for this recipe, but any apple of your liking will do!

  1. I love this cake! I make the same thing but with pears and it is hard to resist eating the entire thing in one night! Yum. Now I know what I will be bringing to a potluck next week!
