carrot cake is my favorite

My all time favorite cake has got to be carrot cake.  If asked, "what kind of cake do you want for your birthday?" I would shout without any hesitation, "CARROT CAKE!" And so voila! A sound conclusion in figuring out your favorite kind of cake!

Easter lunch for me consists of ham and carrot cake.  The end.  Only kidding, sorta.  Since baking this recipe last year for Easter, I wanted to keep with tradition and bring it again to this year's Easter lunch.  And although I proclaimed it to be the "best carrot cake ever!" I tried a new recipe and this years cake takes the lead.

I used this recipe from Sally's Baking Addiction{my new addiction} only tweaking* it a bit.  This year's recipe was much easier, less time consuming, and even more moist, spicy carrot-nut filled and delicious-- so it takes the cake as the winner! pun intended?

The homemade frosting was seriously the best cream cheesy frosting I've ever made --- and I didn't even use all of it!  Next time though, I'm adding every last bit of frosting!  sorry Dad.

With Easter over you might not be baking carrot cakes any time soon, but! if you do or are like me and could eat it every day for breakfast, then please use this recipe!  It is truly the best.

So what kind of cake do you want on your birthday??

*I used crushed pineapple instead of applesauce and added 3/4 cups coconut flakes and 3/4 cups chopped pecans to the mix.  And no raisins, sorry again Dad.  And you don't have to add the chopped pecans to the outside of the cake, but to me this makes it!  It was probably my favorite part of the cake.  Other awesome-ness with this recipe -- it only takes 3 or 4 grated carrots! Two {heaping}cups compared to four cups makes for happy and slightly less orange hands.  Oh & I didn't line my cake pans with parchment or flour, I sprayed them really good with baking spray! but seriously spray them really really really good, ok? promise?
